Lee, the first one is exactly how I do mine except I use cake flour.
7/8 cup flour and 1/8 cup cornstarch sifted together for each cup of
flour the recipe calls for. Makes a lighter cake. And you can use the
same saucepan to do the frosting without having to wash it between.
